Jobs do drop DNS if you go back and redo them, I haven't updated that guide in a while, but since that update I have gotten 3-4 DNS drop from redoing past jobs. The drop rate is very very very rare, but they do occasionally drop.

What's the best way to replace dorm crews when upgrading?
One at a time or all together?

 

Depends on your strategy. If you're getting bumps, then all at one time. If you're not getting bumps, then as you earn enough money.

Also, I would replace when you'll know you'll be offline for at least an hour because new dormmates start at 0 energy.
