Roasted whole chicken with white and sweet potatoes and apples Ingredients: 4-6 pound whole chicken, 2 large white potatoes, two large sweet potatoes, 3-4 Gala apples, olive oil, salt, and various seasonings Preheat oven to 400 degrees Chop white potatoes and sweet potatoes into 2-inch cubes and place in a roasting pan. Cut Gala apples into 1-inch cubes. Add to potatoes. Rinse your chicken and take everything out of the cavity. Pat it dry and prepare to get messy. Rub some oil on the chicken but not too much. Use your favorite poultry seasonings to season your chicken. I used salt, pepper, Italian seasoning and Hungarian paprika. I use salt in the cavity and a mixture of everything on the outside. Place the chicken on top of your potatoes and apples and cover with aluminum foil. Bake for 90 minutes. The last 20-30 minutes, uncover your chicken and let it get brown. During this time, prepare a green veggie of some sort or make a quick salad. I think I got everything but it’s 5am. Anyway, my roommates always cleaned their plates but then .. college students and all that.
