  1. Here is an awsome old HillBilly Recipe i think u guys will Enjoy!

    Baked Possum

    ready in: 5 hrs
    servings: 4

    ingredients:
    1 large possum, skinned, dressed, and washed
    1 quart beer
    4 tablespoons Tabasco sauce
    1 1/2 tablespoon salt
    2 onions, chopped
    1 clove garlic, minced
    2 tablespoons Worcestershire sauce
    4 sweet potatoes
    2 ribs celery, chopped
    1 ounce whiskey

    directions:
    Mix the beer, whiskey, salt, Tabasco sauce, and Worcestershire sauce together. Place possum in a large roasting pan. Sprinkle the celery, onions, and the garlic all over the possum. Pour the liquid mixture over the possum as well. Cover and refrigerate overnight.

    Preheat oven to 350 degrees F. Place the sweet potatoes around the possum. Bake covered for 1 1/2 hours. Baste once or twice with the marinade from the pan as the possum cooks.


    Just remember possum can be prepared like any good fatty pork roast, same seasons.
    Young possum must be live trapped caged and fed on a grain/cornbread etc. for a few weeks until fat.
    Save grease from baking to flavor like you would pork grease,'ala' possum grits, biscuits,
    cornbread.

  6. Here is another HillBilly Fav

    Wild Game Burgoo

    1 pound mixed cooked wild game meats or
    (beef, lamb, pork, chicken)
    1/2 gallon chicken stock
    1/2 gallon beef stock
    1 ounce Worcestershire sauce
    1 cup tomatoes, diced
    1 large onion, diced
    1 stalk celery, diced
    1 small green bell pepper, diced
    1 large potato, diced
    2 large carrots, diced
    1/4 cup peas
    1/2 cup okra
    1/4 cup lima beans
    1/2 cup yellow corn
    2 teaspoons garlic, minced
    salt and pepper to taste

    Combine all ingredients and bring to a boil. Reduce heat and simmer for 2 hours, skimming the top as needed.

  8. Deep Fried Raccoon

    1 raccoon, cleaned
    1 lb bacon
    seasoning salt
    pepper
    your favorite batter
    oil

    Make sure all the fat and glands are removed from the coon.

    Stuff the bacon inside the coon. Season to taste with seasoning salt and pepper.

    Pour on the batter and shake to create a thin layer all over.

    Add to hot oil in a Dutch oven, fish fryer or turkey fryer.

    Cook until golden brown. Remove and drain.

    Allow to cool a few minutes before slicing.

    Serve and enjoy.
     
  9. Rattlesnake Kabobs

    1 rattlesnake, cut into 5 - 8 sections
    1 bell pepper, cut into 5 - 8 sections
    1 red onion, cut into 5 - 8 sections
    1 can pineapple cubs
    1 bottle of A-1 sauce

    Place rattlesnake sections onto a metal skewer with bell pepper and red onion and pineapple sections between each section of snake.

    With a brush, generously apply A-1 sauce to snake sections.

    Place skewers over an open flame, preferably a campfire.

    Cook for about 15 - 20 minutes rotating halfway every 3 - 5 minutes.

    Serve and Enjoy!

  14. My Own Filipino/Italian Fusion Pulutan Recipe.

    "Picante Corneo Sisig"
    Yield: 4 servings

    Ingredients:
    Oil
    1 Onion thinly sliced
    4 Cloves Garlic minced
    1/2 kg Ground Pork
    2 tbsp Brown Sugar
    2 tbsp Oyster Sauce
    2 tbsp pesto
    2 tbsp Tabasco Sauce
    1 tsp Lemon Zest
    5 pcs Birds Eye Chili
    1 tsp Salt
    1 tsp Pepper
    250g Mozzarella Cheese grated

    Procedure:
    1. In a wok add oil to the pan & stir fry shallots & garlic, add ground pork cook for 3-5 minutes.

    2. Add brown sugar, oyster sauce, pesto, tabasco sauce, lemon zest, birdseye chili, salt & pepper.

    3. Add grated mozzarella cheese on top. Cover until the cheese melt.

    4. Ready to Serve. Happy Tummy Happy Wifeyツ
