FOOD REVIEW: Crabs - Episode Six - With summer here and the beach in sight, not only will we look good in a tan but something else will look amazingly good in a shade of red too! No, not your girlfriend in a small fire-engine red bikini! It is something even smexier! Today, I bring you to the land of Singapore LAH! If you think Asian girls in their swimsuits are awesome, Asian-styled crabs are even hotter! Literally! They will definitely add some spice to your life! I learnt this "Singapore-Style Chili Crab" recipe from my grammy by watching her prepare and cook the dish. Who could possibly go wrong with grandma's home-cooking, right? This special delight is usually sold at noisy hawker centres in the heartlands. They are stir-fried in a large wok with several cloves of garlic, then generously doused with a delicious chili-tomato based sauce. MmMmm! SHIOK (an expression of satisfaction) lah! We need a few fresh mud crabs, let it simmer in a pot of boiling water with large onions, garlic, celery and peppercorn to ensure an even and flavorful cooking. If you are planning to make a complementary soup, add some salt to taste. For the sauce, add some oil to the wok and fry up some chopped garlic, ginger and chili padi (bird's eye chili) until their fragrant aroma is released. Next, pour in some tomato ketchup and chili sauce into the mix, then add half cup of crab-stock from the pot and keep stirring to combine. Add some corn flour to thicken up the sauce. You can adjust the consistency at any time. Turn off the heat and toss in a beaten egg. Add a few sprigs of fresh cilantro and spring onions and stir for just 30 seconds. Remove the cooked crabs from the pot and set it down on a nice plate. Gently pour the rich chili-tomato sauce lavishly over it. Serve with freshly baked bread (an accompaniment to the sauce) and a steaming bowl of delicious and warming crab broth. Bon appetit! =) Yours Truly, Brother_Matt Chill! Have a Bento Set!

It's yummy!
