Chocolate Fudge Cake Recipe.

  1. Ingredients:
    175g Self Raising Flour.
    2 Table Spoons Of Cocoa Powder.
    1 Tea spoon of Bicarb Soda.
    150g Caster Sugar.
    2 Table spoons of Golden Syrup.
    2 Medium sized eggs.
    1/4Pt sunflower oil.
    1/4 pt Milk.

    For The Icing.
    75g unsalted butter.
    175 icing sugar (More if needed)
    2.5 table spoons cocoa powder.
    Milk or warm water.

    Method:
    1: Pre-heat oven to 180 Gas mark 4.

    2:Sieve the flour,Cocoa & Bicarb of soda into a bowl.

    3: Add the sugar & mix well, make a well in the centre,And add the syrup,eggs oil & milk beat well until smooth.

    4:Spoon the mixture into 2 tins & bake for 25-30 minutes until risen & firm to touch remove from oven & leave to cool on a cooling rack.

    5:Sandwich the 2 cakes together with butter cream icing.To make the icing place butter in the bowl & beat it until soft.

    6:Gradually sift & beat in the icing sugar then add enough water/milk until soft.

    7:Finally sandwich the cakes together with the icing & then cover the cake in rest of the icing. Design the top of the using a fork.

    Here's a converted version for us lazy Americans who have to simplify everything.


    Cake:

    1 1/2 Cups + 2 Tbsp - Self Rising Flour
    2 Tbsp - Cocoa Powder
    1 Tsp - Baking Soda
    3/4 Cups - Caster Sugar*
    2 Tbsp - Golden Syrup**
    2 Medium Eggs
    1/2 Cup - Sunflower Oil
    1/2 Cup - Milk

    *Caster Sugar is a very fine sugar, but not as fine as powdered. You can make it by putting granulated sugar in a food processor.

    **Golden Syrup can be found in international food sections at grocery stores, or you can make your own with sugar, water, and lemon juice.

    Icing:

    1/3 Cup - Unsalted Butter
    3/4 Cup - Powdered Sugar
    2 1/2 Tbsp - Cocoa Powder
    Milk or Warm Water as needed

    Instructions:

    Preheat oven to 355°F and lightly coat two 8 inch round baking pans with flour or cooking spray.

    Sift Flour, Cocoa Powder, and Baking Soda into a large mixing bowl.

    Add the sugar and mix until well blended. Make a well in the powdered ingredients. Add Syrup, Eggs, Oil, and Milk and beat until smooth.

    Split the mixture between the two baking pans and bake for 25-30 minutes or until a knife or tooth pick inserted in the center comes out clean. Should be firm to the touch.

    Remove from baking pans and spread icing on one of the cakes. Place the second cake on top and coat with the remaining icing. A fork can be used to make it look pretty. ?

    Icing:

    Beat butter in a mixing bowl until soft.

    Gradually mix in the powdered sugar and cocoa powder until well blended, adding milk or warm water as needed to make it soft.
