It's to do with that thing called the English language. Tenses, and grammatical persons. 'I' and 'We' are first person pronouns. 'You' is an example of a second person pronoun. And finally, 'He', 'She', 'It' and 'They' are all third person pronouns. A party is a formal term to refer to another person. So a third party app is an app not made by the first party (A Thinking Ape).
